- What are the keyboard shortcuts (like command-shift-n)
- how are default values setup(when I create a new transaction of name n category, and amount are set to previous or default values
- set transaction numbers to next check as default

Command + Alt + N : New operation
Command + Alt + R : Apply rules on selected operations
Command + Alt + U : Create new occurence of the selected repeating operations

This is not possible yet.

You can't do it automatically, you have to select your checkbook in the numbers completions list.
