Is there a way to use Categories to separate transactions?

What do you mean by "separate transactions" ? Can you give an example of what you would like to do ?

If a check charge is made to the market, the transaction is grouped under Groceries.

Ahhhh I think I have guessed what you want : you would like to group transactions by category in the operations list, right ?
If so, just select "Type" in the sort by popup button at the top of the list.
